Recipe: Avocado Half & Tuna Salad

I see the phenomenon with pinterest and how it can incite inspiration.  Not only does it stimulate your eyes with pretty things but also your appetite with delicious recipes.  I recently saw a delicious crab salad in avocado that looked just incredible. I don't remember the source and wished i had flagged the page so i could give proper credit - in any case, here's my adapted version.

** Avocado Half & Tuna Salad **

  • 2 tsp finely diced red onion
  • 2 tsp chopped cilantro
  • Dash of sea salt
  • Dash of pepper
  • Teaspoon of spicy brown mustard
  • Can of chunky white tuna
  • Avocado half
  • Mix ingredients in bowl
  • Stuff avocado half with mixture and serve.
So what do you think? Easy to make and with delicious results. Of course you should adapt your own versions - i don't think most will agree with mustard as an ingredient, but trust me, its gives it an extra umph. Enjoy and Bon appetite!
