It was one of those self-imposed lazy Saturday due partly to a nigh of heavy dancing and drinking. I was at my fave live music spot the Village Underground having a grand old time. I love everyone there and I can always count on having a blast! But it wasn’t so much that I had a lot to drink it was more that I mixed. Never ever mix! Bad, bad, bad idea.

So that and amongst other things, had me down on the sofa on a gorgeous Saturday day. No regrets though… I made the best of it: I left the house briefly on a hunt for breakfast and inexplicably found myself in the center of Target. I have no idea how that happened! Next thing I know I have this super-cute summer dress in hand (which I got on sale) and nothing to eat! Defeated I went back home to my sofa and napped for 4 hours (if that’s what you call a nap) and attempted recuperation. When I woke I had an undeniable craving for brownies and pasta. Odd yes – but this HAD to happen. And so it did.
 
A quick run to the market for a box of mix I was on my way: I decided to add a little of my own personal touch by including crumbled cashew nuts and two bottle caps of Flor de Caña rumYes, I know I was hungover but trust me this adds a great little kick to the brownies. 
 
While things baked I made a delicious Beet & Goat Cheese salad. Obviously this is not my photo. My photo was rather sad and embarrassing so I stole this one. This is one of my favorite salads and its really easy to make: It simply consist of tossed baby spinach (include arugula if you like) in light olive oil, balsamic vinegar and salt & pepper in a bowl. Top with crumbled goat cheese, sliced boiled beets, and pumpkin seeds. Really the best thing ever!
 
I always have a pack or two of Buitoni in my refrigerator. This one was Four Cheese Ravioli topped with a good old bottle of Francesco Rinaldi Traditional Sauce. I included MORE cheese by adding two slices of Brie. Brie and I are in love. Sorry about the photo. I don’t do food photography all too well. 
 
TIME FOR BROWNIES! Here it is. All I’ve been craving for a week. Whenever I have cravings they are intense and MUST be satisfied within a weeks time or else. I’m serious about this. THIS, right here is what made everything all right again. And yes, I actually ate all four square and have no regrets… ok maybe a little regret.
 
So there you have it. It was not a wasted Saturday after all.
