Yes, that’s right, I sexy my salad. How you ask? Easy, just get creative.
After my close to five days stay in Miami with the family and eating just about anything that crossed my path, i was afraid of getting on a scale knowing that there was a chance i had gained more than a few pounds. I was so disciplined with the Master Cleanse but its not easy to refuse Mom’s home cooking.
I’m happy to say that i only gained 2lbs. WEPA!!!
So back to the gym i go and eating right in on the agenda once more. I made the salad you see above for my lunch. It pretty much just shoved all the things i found in my refrigerator and the result was Deeeelicious. Here is are the ingredients i used.
1/2 small avocado
1 1/2 kale leaf
2 table spoon of chickpea salad (bought pre-made at neighborhood gourmet store)
1 table spoon of red bean salad (bought pre-made at neighborhood gourmet store)
– hand-full of raspberry
– hand-full of cashew nuts
– sprinkle of olive oil
1 lemon for seasoning
– salt & pepper to taste
– pita chips for the final kick
The thing about salads is that you can never go wrong. Its so versatile. Just be conscious of the amount of ingredients and let your creativity go wild.
